Bruschetta

Such a simple Italian delight that takes mere minutes to put together.

Outside of Italy we’re unlucky we can’t get the authentic bruschetta bread (it’s like a large, thinly sliced loaf of Italian bread, and you can buy it in supermarkets there). But! We can make do with a good Italian bread from your favorite store, or even use baguette if you have to! 🤷‍♂️

The main ingredients are; good quality tomatoes – Roma or similar, red wine vinegar – for that zingy kick, red onion, garlic, oregano, and some mozzarella cheese (or similar).

Too many restaurants will serve you cold Bruschetta mixture with Baguette, and that’s just not how to do it. Let’s make it right:

Step 1: Chop your tomatoes into little cubes, and very finely dice your onion, then mix the 2 together

Step 2: If you’re a garlic lover, crush or mince 2 cloves, and add those too

Step 3: Add Oregano and Red Wine vinegar. We’re not giving you a measurement here because this is purely down to taste. A pinch of Oregano and 1 tsp of red wine vinegar may be all you want, add more for extra Oregano flavour or vinegary kick. Mix everything well and set aside.

Step 4: Toast your bread lightly on both sides, failure to toast it well enough to help make it crispy will lead to a soggy Bruschetta. You can pre-heat broiler/grill while you wait too.

Step 5: Top with mixture and sprinkle the Mozza on it, then broil until melted.

Serve hot and enjoy!

Tips:

  • If you like cold bruschetta, you’re done when you get to step 4.
  • If just Oregano doesn’t tickle your tastebuds enough, try using an Italian herb blend or similar
